Easy Vegan Gazpacho
Lately I have been obsessed with this easy vegan gazpacho. So what is Gazpacho?
The easy answer is cold soup. This Spanish staple will help you make it through those hot summer days.
There are many different ways to make gazpacho, but for this recipe I have simplified it down to 5 ingredients! And the best part is you can easily store this in the fridge for those afternoon cravings.
This recipe is fast, easy, hydrating and vegan. You can mix it up and add tomato slices and / or cucumber slices as a garnish. I change these up depending on my mood. You can also add all 3 cucumbers instead of saving a half for garnish. Do this if you like a more cucumber-y summer taste. The hemp seeds give it a hearty taste and texture. When buying hemp seeds get shelled hemp seeds. These are available at whole foods or sprouts markets.
3 Cucumbers, peeled
1/2 cup water
1/4 cup Hemp Seeds
1 Pink Himalayan Sea Salt
1 tsp Pepper
Optional: 1/2 tomato, sliced
- Mix avocados, water, salt, pepper and 2 1/2 cucumbers in a blender.
- Set aside half of one cucumber to use as garnish.
- Place in covered container and chill in the fridge for 20 minutes.
- Serve chilled in a bowl, sprinkle hemp seeds, cucumber garnish, a touch of Pink Himalayan sea salt and optional tomato and cucumber slices on top.
